An irresistibly rich, hearty broth houses both smooth noodles to slurp up, and tender pork belly for melt-in-your-mouth texture. 1 tbsp Cooking Oil
7 oz Thinly Sliced Pork Belly
1 Onion, thinly sliced
1 tbsp Mirin
1 tbsp Soy Sauce
2 cubes Japanese Curry Cubes
3 cups Water
500 g Udon Noodles
4 tbsp Scallion, thinly sliced
½ tbsp Sugar
2 cloves Garlic, minced
1 tbsp Unsalted Butter
½ tbsp Katsuobushi Dashi Sauce

Shichimi Togarashi, to taste
Fukujinzuke (Japanese Pickled Radish), as preferred
Rakkyo, as preferred
