Ingredients
1 Dried Kelp, 2”x2” size
3 oz Potato, cubed
½ oz Shiitake Mushroom, sliced
1 oz Scallion, chopped
2 oz Grey Squash, cubed
2 ½ oz Onion, roughly chopped
1 Green Chili Pepper, sliced
3 oz Brown Shimeji Mushroom, trimmed
2 oz Enoki Mushroom, trimmed

Seasoning
2 tbsp Gochujang
1 tbsp Gochugaru (Korean Chili Flakes)
1 tbsp Soy Sauce
½ tbsp Garlic, minced
4 tsp Sugar
1 tsp Doenjang

Rice Water
1 cup Water
2 cup Sushi Rice, rinsed once

Garnish
Scallions, chopped
